Japanese Matcha is the young delicate tea leaves, grown under shade for three weeks then hand picked, dried and ground into a fine powder. Growing tea under shade means that the plant produces very high levels of chlorophyll which accounts for the bright vibrant green colour and high levels of nutrients and antioxidants in the tea.
