Coffee of the Month - Costa Rica Hermosa Dota

toffee, apple, gingernut
£8.00 GBP

This Costa Rica Hermosa is a delicious medium roast coffee with all the enticing notes of toffee apple.  It has a rich butter toffee flavour and a crisp clean apple acidity and a ginger nut biscuit finish.  The varietals are Red and Yellow Catuai and Caturra grown above 1500masl.

The coffee cherries are measured then through one of 12 depulpers. Next follows a dry fermentation stage of 16-18 hours before water is added, finishing in a wash and removal of all the mucilage. Beans are then dried in pre-dryers with air temp always below 40°C until dried to 11% moisture.

In the small town of Santa Maria de Dota, at the centre of the coffee growers of Tarrazu, is the coffee processing mill and facilities belonging to Coope Dota. Established back in 1960 they now represent nearly 1100 producers. Christian Chinchilla, the new GM in 2023/24 spent a year just visiting and listening to all members before starting on his main role, so that they were clear he knew and understood all of their issues. You can clearly feel a positivity and happiness in the team.

The first coffee processor in the world to be certified as carbon neutral, back in 2011, sustainability is about more than just the people and business elements. 2024 saw the launch of Project One - this saw COOP Dota work with CATIE and CAIA Alexandria (Advanced Centre for Applied Research) to develop not only an improved fertiliser from the waste honey process water, but to capture pollution from the air as a part of doing so.  Their aim is to go further than being carbon neutral by converting waste products into fertiliser that has seen a 50% improvement over traditional fertilisers.

The cooperative has also focused on addressing the gender imbalance within the cooperative roles. As a multifaceted business, they have a café for tourism, tours, a full roastery operation and numerous associated business functions. The opening up of these roles has seen more younger women choose to stay or come and work in the area, as roles are available here that they may not have the chance for in the big cities. This is turn is starting to reduce the generational drift to the cities that is part of many coffee producing regions.

The cooperative support the youth in sports, seeing members in the Paris Olympics with Taekwondo and cycling, as well as keeping an eye on the future by running a coffee school certified by ICAFE. This is focussed at 17 and 18 year olds and is on top of their diploma, covering all aspects of the industry from the cherries through to being a Barista. It has been running now for nearly 20 years.

How will my coffee be packaged?

We use heat sealed bags with a one-way valve (to let gases escape but none in) and this will keep your coffee fresh for up to four months unopened (if you really want to keep it that long!)  We use box-bottomed resealable valve bags as our default but if you want the tall non-resealable valve bags then please ask in the notes for order section.  We then pack your bags of coffee into bespoke cardboard boxes.  These will prevent your coffee from being damaged in transit and are 100% recyclable.

Where does The Bean Shop deliver to?

We currently deliver all over the UK and Europe.  It can get a bit tricky further afield than that as it becomes increasingly difficult to keep track on the parcel's whereabouts. To be honest there is probably a coffee roaster a bit closer if you're outside Europe anyway!

How much does postage cost?

No-one really likes paying for postage but in order to avoid increasing our prices we have opted to charge a flat-rate of £3.00 for all our UK orders.  This is expensive if you only buy one bag of coffee but becomes very reasonable if you order more bags.  We use Royal Mail 1st class for orders up to 3 bags.  For orders 4 bags and over we use DPD 48 hour delivery as a default (this option will require a signature upon delivery.)

In geographically isolated areas of the UK, DPD can take longer than 48 hours so we have added the option of paying for Royal Mail which could be more efficient.

How long will it take?

We aim to deliver your order within 48 hours of receiving it (under normal circumstances) and are often much quicker!  During peak periods (i.e. Christmas) your order may take a little longer due to delays or extreme weather conditions.

If I'm not in?

For orders of 1 bag of coffee our boxes are post-box friendly so should be delivered whether or not you're in.  For larger parcels, usually the delivery person will leave a card saying it has been returned to the post depot where you can collect it from.  Many customers find it easier to have their coffee delivered to their place of work so that there is always someone there to accept it.
